Danish Æbleskiver
Round Danish buttermilk pancakes cook in a special pan until golden and tender, ready for jam and a dusting of icing sugar.
Prep 15 min · Cook 25 min · Total 40 min · Makes about 28 æbleskiver

Ingredients
- 2 egg whites
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 egg yolks
- 4 tablespoons plus 1 stick melted butter
- 2 cups buttermilk
- 1 tablespoon sugar
- 1/2 teaspoon salt
Directions
- Whip the egg whites in a mixing bowl until they stand up very stiff.
- In a separate large bowl, combine the flour, baking powder, baking soda, egg yolks, 4 tablespoons melted butter, buttermilk, sugar and salt. Beat the mixture until it is completely smooth.
- Gently fold the whipped egg whites into the batter, taking care not to knock out all that lovely air.
- Warm the æbleskiver pan, then add a small knob of butter to every cup. Fill each cup with batter.
- Once the edges of each little sphere have set, swiftly turn them with a knitting needle or fork. As they continue cooking, keep rotating the æbleskiver until they are cooked all the way through. If you want to go really old school, tuck a few pieces of apple into the center of each æbleskive before turning.
- Serve the æbleskiver with jam, and finish each one with a sprinkle of icing sugar.
