Ingredients
- 2 Tbsp cooking oil
- 1 yellow onion
- 8 oz. wide egg noodles
- 1/2 head cabbage
- 2 Tbsp butter
- Salt and pepper to taste
Directions
- Cut the onion into strips 1/4-inch wide. Put the onion in a large pot with the cooking oil, then cook over medium to medium-high heat until the onion has softened and picked up browning along the edges.
- As the onion cooks, cut out the cabbage core and slice the cabbage into strips 1/2-inch wide. When the onion is lightly caramelized at the edges, add the cabbage to the pot with a pinch of salt and about 1/4 cup water. Keep cooking and stirring until the cabbage is tender, about 15 minutes, letting the water loosen the browned bits from the bottom of the pot.
- While the cabbage cooks, set a pot of water over heat for the egg noodles and bring it to a boil. Add the noodles once the water is boiling, then cook until tender, about 7 minutes. Pour the noodles into a colander to drain.
- When the cabbage is tender, take the pot off the heat. Add the drained noodles, butter, and a generous seasoning of salt and pepper. Stir everything together so the butter melts in the heat of the pot. Taste, adjust with more salt and pepper as needed, and serve warm.
