Ingredients
- 4 cups cooked rice.
- 1 lb. ground turkey or beef
- Taco seasoning
- 1 cup frozen corn kernels
- 1 can black beans
- 4 oz. cheese
- 1 1/3 cup salsa
- 2 green onions
Directions
- Start with the rice, since everything else can come together while it cooks. Prepare it according to the directions on its package. For about 4 cups of white rice, use 1.5 cups uncooked rice with 2.5 cups water, though the right amount can change depending on the type of rice, so check your package.
- While the rice is going, put the ground turkey or beef in a skillet and cook it over medium heat until no longer raw. If your meat is very lean, add a small amount of oil so it does not stick to the pan.
- When the meat is cooked through, stir in the taco seasoning and 1/2 cup water. Let the mixture simmer, stirring as needed, until the liquid cooks down into a saucy coating, about 5 minutes. Take the skillet off the heat and set the meat aside.
- Thaw the corn kernels, then rinse and drain the black beans. Shred the cheese and slice the green onions.
- When the rice is done, use a fork to fluff it, then portion it into 4 containers. Add the remaining 6 bowl components to the containers too: the taco meat, corn, beans, cheese, salsa and green onions.
- Warm the bowls for 1-2 minutes before eating, just long enough to melt the cheese and heat the meat and rice all the way through.
