East African Braised Chicken

Directions

  1. Heat the oven to 350 degrees.
  2. Season the chicken with salt and black pepper. Warm the oil in a Dutch oven over medium-high heat, then add the chicken and brown it for 4 minutes per side, or until it turns golden. Transfer the chicken out of the pan.
  3. Put the onion in the pan, lower the heat to medium-low, and cook for 10 minutes, stirring often. Add the ginger and next 5 ingredients, from ginger through garlic, and cook for 1 minute. Stir the chicken back in along with the broth and the remaining ingredients, then bring everything to a boil. Cover the Dutch oven and move it to the oven to bake at 350 degrees for 1 hour.
