Ingredients
- 1 cup unsalted butter, melted, plus more for greasing pan
- 1 1/4 cups whole wheat flour
- 1 cup all-purpose flour
- 1 3/4 cups old-fashioned rolled oats
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 1/2 teaspoons kosher salt
- 3/4 teaspoon baking soda
- 1 1/2 cups apricot jam
- 1/2 cup walnuts, roughly chopped
Directions
- Heat the oven to 350 degrees F. Butter a 9- by 13-inch baking pan, then fit it with parchment paper, leaving about 1 inch hanging over the long edges.
- In a large mixing bowl, combine the whole wheat flour, all-purpose flour, oats, granulated sugar, brown sugar, salt, and baking soda. Add 1 cup melted butter and stir until the mixture is evenly damp and crumbly.
- Pack all but 3/4 cup of the streusel firmly into the prepared pan, making a level base. Spoon the jam over it, keeping a 1/4-inch edge clear all the way around. Squeeze the reserved streusel into small clumps, toss it with the walnuts, and scatter that mixture over the jam.
- Bake until the surface is golden brown, about 40 minutes. Move the pan to a wire rack and cool completely, about 2 hours.
- Use the parchment overhang to lift the dessert out of the pan and onto a work surface. Slice into bars. Store the bars at room temperature for up to 3 days.
