Ingredients
- 16 oz. baby red potatoes
- 12 oz. fully cooked smoked turkey sausage, cut into slices about 1/4-inch thick
- 12 oz. green beans or yellow beans, ends trimmed, I used a blend of both
- 8 oz. baby carrots, thicker ones halved through the length
- 1 small yellow onion, halved and sliced
- 4 tsp minced garlic
- 1/4 cup olive oil
- 1 Tbsp Italian seasoning
- Salt and freshly ground black pepper
- 2 Tbsp chopped fresh parsley
- Grated parmesan, for serving, optional
Directions
- Preheat the oven to 400 degrees. Put the red potatoes on a large plate and microwave them for 3 minutes, turning them over midway through. When they are cool enough to handle, cut them into quarters. Transfer the potatoes to a large mixing bowl with the sausage, beans, carrots, onions and garlic. Pour in the olive oil, add the Italian seasoning, and season generously with salt and pepper to taste.
- Cut 4 sheets of heavy duty aluminum foil, each 16 by 12-inch. Set the pieces out separately on a flat work surface. Spoon the sausage mixture evenly onto the foil sheets, arranging each portion into a loose rectangle. Bring the sides of the foil inward and fold them over 2 times to close, leaving a little space inside for heat to move around. Fold up the ends twice as well to seal each packet.
- Arrange the foil packets next to each other on a 18 by 13-inch baking sheet. Bake in the heated oven until the vegetables are tender, about 35 – 40 minutes. Open the packets carefully, since hot steam will escape. Finish with parmesan and parsley, and serve warm.
