Easy Greek Salmon Cooked in a Grill Pan

Ingredients

  • 2 skinless salmon pieces, about six ounces each
  • 1 1/2 T olive oil
  • 1 tsp. Greek Seasoning
  • 1 garlic clove, crushed or 1/8 tsp. garlic puree from a jar
  • 1 tsp. lemon zest, or less
  • Sliced lemon to squeeze over

Directions

  1. Stir together the olive oil, Greek Seasoning, garlic puree, and lemon zest in a small bowl. Set the salmon on a plate or baking sheet, then coat both sides with the seasoned oil. Leave the fish at room temperature to marinate for 15 minutes.
  2. Set a grill pan on the stove and give it a light misting of olive oil. If you do not have a mister, moisten a paper towel with olive oil and swipe a thin layer over the pan instead. Warm the pan over medium-high heat for 1-2 minutes, just until a drop of water hits the surface and sizzles.
  3. Lay the salmon diagonally across the grill ridges and cook for 2-3 minutes, until grill marks are visible. Turn each piece a quarter turn and cook for another 2-3 minutes.
  4. Gently flip the salmon and cook the second side for 1-2 minutes. The full cooking time should stay under 7-8 minutes, and may be shorter depending on the heat of your pan and the thickness of the fish. When it is ready, the salmon should feel firm but not hard.
  5. Serve right away with the marked side facing up. Serve hot, with lemon slices for squeezing over the salmon.
  6. Penzey's Greek seasoning includes coarse salt, garlic, lemon, black pepper, Turkish oregano, and marjoram. If you do not have it, combine any of those seasonings you have available. Cavender's is another option with good flavor, available at Amazon.com, as long as you are not sensitive to msg.
