Greek Turkey Burgers
Turkey burgers with feta, spinach, sun dried tomatoes and a cool lemon yogurt sauce make an easy, lively dinner on a bun.

Ingredients
- 7 oz. plain greek yogurt
- 1 medium fresh lemon
- 1/4 tsp minced garlic
- 1/4 tsp dried dill
- 1.25 lb. ground turkey
- 6 halves sun dried tomatoes
- 1 medium red onion
- 2 oz. frozen spinach
- 1/4 cup crumbled feta
- 1 tsp dried oregano
- 1/2 tsp minced garlic
- 1/3 cup breadcrumbs
- 1 large egg
- 1 medium cucumber
- 6 hamburger buns
- To taste salt and pepper
Directions
- Start with the sauce: stir together the yogurt, 1/4 tsp minced garlic, dried dill, the juice from half the lemon, and a dash of salt. Once it is smooth, slide it into the refrigerator so the flavors can settle while you work on the burgers.
- Thaw the frozen spinach, then wring and press it until you have pushed out as much liquid as you can. Run a knife through it so the pieces are not long and stringy. Chop the sun dried tomatoes, and chop 1/4 of the red onion too.
- Put the ground turkey in a bowl. Add the spinach, then the feta, sun dried tomatoes, red onion, egg, bread crumbs, dried oregano, 1/2 tsp minced garlic, 1/2 tsp of salt, and a few grinds of fresh pepper. Mix until the bowl looks evenly combined, then shape the turkey mixture into 6 patties.
- Cook the patties on a counter top grill, in a non-stick skillet, or over an open flame. Spread yogurt sauce over both cut sides of a bun, add a warm patty, and finish it with thin red onion and cucumber slices.
