Easy Leftover Turkey Pita Sandwiches with Fresh Cranberry Salsa

Ingredients

  • 2 T + 1 tsp. mayo
  • 1/4 tsp. celery seed
  • Pinch of dried thyme
  • Pinch of dried sage
  • 1 cup diced leftover turkey, diced fairly small
  • 1/4 cup finely diced celery
  • 1/4 cup thinly sliced green onions
  • Salt and fresh-ground black pepper to taste
  • Four whole-wheat pita bread halves
  • 1/2 cup Trina's Fresh Cranberry Salsa

Directions

  1. In a bowl, combine the mayo with the celery seed, dried thyme, and dried sage. Set it aside so the herbs can mingle as you cut up the turkey, celery, and green onions. Fold those into the mayo mixture, then add salt and fresh-ground black pepper until it tastes right.
  2. Spoon about 2 tablespoons of Trina's Fresh Cranberry Salsa into the base of each pita bread half. Add about 3 tablespoons of the turkey mixture to each pita, then eat right away.
