Ingredients
- 1 lb. fresh asparagus, trimmed and cut diagonally into 2 inch pieces
- 1 T olive oil
- Salt and fresh ground pepper to taste
- Zest of one lemon
- Juice of one lemon
- 1/4 cup freshly-grated or purchased coarsely-grated Parmesan cheese
Directions
- Most asparagus can go straight to prep, but if yours looks gritty, rinse it and pat it dry with paper towels. Snap 1 stalk to find where the tough end begins, trim the rest to match, and slice the spears on the diagonal into 2 inch pieces.
- In a bowl, coat the asparagus with 1 tablespoon olive oil, then add salt and fresh-ground black pepper. Spread it out in the Air Fryer basket.
- If your Air Fryer needs it, heat it to 400F/200C before cooking. Air fry the asparagus for 7 minutes, checking at about 5 minutes if you prefer it more crisp.
- As the asparagus cooks, prep the lemon and cheese. Remove the zest first, squeeze the lemon for juice, and measure the freshly grated Parmesan.
- When the asparagus is lightly browned and cooked the way you like it, return it to the same bowl and toss it with the lemon zest and lemon juice.
- Transfer the asparagus to a plate and scatter the freshly grated Parmesan over the top.
- Serve it hot and enjoy.
