Ingredients
- 4 small or 3 medium sized zucchinis
- 2 T olive oil to brush zucchini
- 2 T Greek Seasoning
- 3/4 cup crumbled Feta Cheese
Directions
- Rinse the zucchini and slice off the ends. For small zucchini, cut each one lengthwise into 4 pieces; for larger zucchini, make 6 long pieces from each. If the larger zucchini have a seedy center, shave that seedy strip away along the edge.
- Coat both sides of the zucchini with olive oil, then season them generously with Greek Seasoning.
- Set a Stovetop Grill Pan over medium high heat and let it get hot before the zucchini goes on, so the surface will mark the pieces nicely.
- Place the zucchini across the grates, with one flat side facing down, and grill for about 3 minutes. Peek under an edge to see whether grill marks have formed.
- Rotate each piece onto its other flat side and cook for about 3 minutes more. Check again for grill marks.
- Turn the zucchini so the green skin side is against the pan, then cook for 3-4 minutes more, until a fork shows they are as tender as you want them.
- Transfer the grilled zucchini to a serving platter and scatter Feta Cheese over the top.
