Low-Carb Baked Eggs in Canadian Bacon Cups

Ingredients

  • 18 round slices Canadian bacon, 3 inches across
  • 6 eggs
  • Salt and fresh ground pepper to taste
  • Toast pieces to dip into the egg, optional

Directions

  1. Preheat the oven to 400F/200C. Coat 6 large silicone muffin cups or a large-cup muffin pan with olive oil or non-stick spray. If you’re using silicone cups, set them on a baking sheet so moving them to and from the oven is easy.
  2. Fit 3 slices of Canadian bacon into each muffin cup, letting the slices overlap so the cup is fully lined. Press them down gently so they take the shape of the cup, then bake for 10 minutes.
  3. Take the baking sheet or muffin pan out of the oven, then crack an egg carefully into each Canadian bacon cup. Sprinkle with a little salt and freshly ground black pepper to taste.
  4. Return the pan to the oven and bake for 14-16 minutes, adjusting slightly depending on how set you like your eggs. For reference, the eggs shown were baked for 15 minutes, though a little less time would give a softer result.
  5. Serve while hot, with toast strips for dipping into the yolk if you’d like.
