Easy Rapid-Pickled Onions
A fast vinegar soak softens raw onion into a tangy, crisp topping for sandwiches, salads, tacos, and anything that needs a bright bite.

Ingredients
- Raw onion, sliced, cut into rings, or diced
- Red wine vinegar to cover
Directions
- Place the onion in a non-reactive bowl, then add just enough vinegar to cover it. Set it aside for at least 15 minutes and up to 1 hour, giving it a stir once or twice as it rests; the longer it sits, the softer and more pickle-like it will become.
- Pour off the vinegar, then use the onion anywhere you’d normally add raw onion, like sandwiches, salads, and other dishes.
