Easy Red, White, and Blueberry Salad

Ingredients

  • 3 cups fresh blueberries
  • 4 cups fresh strawberries, cut into bite-sized pieces
  • 1 banana, cut into bite sized pieces
  • 6 ounces low-carb vanilla yogurt, or more
  • 6-8 oz. plain fat-free Greek yogurt
  • 1 T light Agave Nectar or another sweetener of your choice
  • 1/2 tsp. Vanilla

Directions

  1. Sort the blueberries, discarding any that are soft, bruised, or spoiled. If they need rinsing, wash them in a colander, then dry them thoroughly, using paper towels if necessary.
  2. Hull the strawberries, then cut them into pieces small enough for one bite.
  3. Peel the banana and slice it into bite-size pieces.
  4. Add the blueberries, strawberries, and banana to a bowl, then stir carefully so the fruit stays intact.
  5. If you are mixing the dressing yourself, whisk the Greek yogurt with the agave and vanilla. Taste it, then add a little extra agave or vanilla if you want to adjust the flavor.
  6. Add the dressing to the fruit and fold everything together gently. Serve immediately.
  7. The salad can sit in the refrigerator for a few hours, but it will become watery if it rests too long.
