Prep 10 min · Cook 5 min · Total 45 min · Makes about 1.5 cups

Ingredients
- 1.5 cups sliced red onion
- 1 clove garlic
- 3 Tbsp white sugar
- 1.5 Tbsp salt
- 1/2 tsp peppercorns
- 1 cup white vinegar
Directions
- Slice the red onion very thinly, and remove the peel from the garlic. Put both the onion and the garlic into a large bowl made of glass or ceramic.
- Combine the sugar, salt, and peppercorns in a small saucepan. Pour in the vinegar, then stir until the sugar and salt have dissolved. Cover the pan and heat it over medium-high until the liquid reaches a boil.
- When the vinegar mixture is boiling, carefully pour it over the onion and garlic. Push the onion down into the liquid so every slice is covered, then leave it to cool to room temperature.
- After it has cooled, you can use the onions right away, or move the onions and all of the brine into a lidded non-reactive container, such as glass, ceramic, or plastic, and refrigerate. Store the onions in the refrigerator for 3-4 weeks.
