Easy Stir-Fried Spinach with Garlic and Parmesan

Ingredients

  • 8 oz baby spinach leaves
  • 2 T olive oil
  • 6-8 whole garlic cloves
  • 1-2 T freshly grated parmesan cheese
  • Fresh ground black pepper to taste

Directions

  1. Choose a large, heavy skillet or a wok for this recipe. If the spinach needs washing, rinse it, then get it very dry in a spinner or with paper towels. Pre-washed spinach lets you move right along.
  2. Set the pan over medium high heat for about 1 minute, until it feels hot when you hold your hand above it.
  3. Pour in the olive oil and warm it until it shimmers, then add the garlic cloves. Stir-fry for 30 seconds to 1 minute, stopping as soon as the garlic is fragrant. Do not let the garlic brown, or it can turn bitter.
  4. Lift out the garlic cloves and discard them.
  5. Add the spinach to the seasoned hot oil and start stirring right away. As the leaves wilt, bring the spinach up from the bottom of the pan so the uncooked leaves can drop down into the heat. Cook just until everything is hot and wilted, about 2-3 minutes.
  6. Transfer the spinach to a serving plate.
  7. Scatter the parmesan over the top and finish with fresh-ground pepper.
  8. Serve hot.
