Easy Swiss Chard

Ingredients

  • 1 large bunch of fresh Swiss chard
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, sliced
  • Pinch of dried crushed red pepper
  • 1/4 teaspoon of whole coriander seeds, optional

Directions

  1. Rinse the Swiss chard well, making sure to wash away any grit hiding in the leaves. Pull or cut the thick stalks away from the leafy parts, then slice the stalks into 1-inch pieces. Cut the leaves into inch-wide ribbons, and keep the stems and greens in separate piles.
  2. Warm the olive oil in a sauté pan over medium high heat. Stir in the sliced garlic, crushed red pepper, and coriander seeds, if you are using them, and cook for about 30 seconds, just until the garlic smells fragrant.
  3. Add the cut Swiss chard stalks to the pan. Reduce the heat to low, put on the lid, and cook for 3 to 4 minutes.
  4. Add the chopped chard leaves and toss them with the garlicky oil in the pan. Cover again and cook for 3 to 4 more minutes, then turn the leaves and stalks in the pan.
  5. If the chard is not quite tender yet, take out a piece and taste it, then cover the pan and cook it a few more minutes if needed.
  6. Serve immediately.
