Easy Taco Salad
A crisp taco salad with salsa-seasoned beef, lime-honey dressing, crunchy tortilla strips, beans, corn, and creamy toppings.

Ingredients

Directions
- Warm 1 tablespoon of the oil in a large skillet set over medium-high heat. Add the beef and leave it alone until the underside browns, about 3 minutes.
- Break the beef apart with a spatula, then continue cooking and stirring now and then until it is browned all over and cooked through, about 5 minutes. Take the skillet off the heat, mix in the salsa and 1 teaspoon of the salt, and put it aside.
- While the beef cooks, whisk the lime juice, honey, garlic, and remaining 1/4 teaspoon salt in a small bowl. Pour in the remaining 1/2 cup oil in a slow, steady stream while whisking the whole time, until the dressing comes together; set it aside.
- In a large bowl, add the romaine, tortilla strips, cheese, beans, corn, tomatoes, and onion. Pour the dressing over the salad and toss everything together. Finish with spoonfuls of guacamole and sour cream, scatter cilantro over the top, and serve with lime wedges.
