Ingredients
- 2 cups all-purpose flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 2 cups eggnog
- 2 large eggs
- 3 Tbsp butter, melted
- 1/2 tsp rum extract
- Maple syrup, for serving
Directions
- Heat an electric griddle to 350 degrees. In a mixing bowl, whisk the flour, baking powder, salt and nutmeg together. Create a hollow in the center of the dry ingredients, then put the bowl aside.
- In another mixing bowl, whisk the eggnog, eggs, melted butter and rum extract until the mixture is smooth and evenly combined. Add the wet ingredients to the hollow in the flour mixture, then whisk only until the batter comes together; little lumps are completely fine.
- Spoon about a heaping 1/3 cup of batter onto a buttered griddle. Vegetable oil is also fine if you would rather avoid butter browning too quickly. Use the bottom of the measuring cup to nudge the batter into an even circle.
- Cook the pancake until the underside is golden brown. Lift it, butter the griddle again, then turn the pancake over and cook the second side until golden brown. Serve warm with butter and maple syrup.
