Extra-Crispy Bar-Style Tortilla Pizza
A flour tortilla becomes a crackly skillet pizza with sauce, mozzarella, Parmesan, basil and browned, cheesy edges.

Ingredients
- 1/2 teaspoon extra-virgin olive oil, plus more for drizzling
- 1 flour tortilla
- 1/4 cup store-bought or homemade pizza sauce
- 1 1/2 ounces shredded whole milk low moisture mozzarella cheese
- 1 ounce grated Parmesan cheese, divided
- 2 basil leaves, roughly torn
- Kosher salt
Directions
- Set an oven rack so it sits 6 to 8 inches under the broiler element, then turn the broiler to high. Warm the oil in a large cast iron skillet over high heat until it shimmers. Turn the burner down to medium-low, then use a paper towel to swipe away the extra oil. Lay the tortilla in the skillet with the more textured side against the pan. Spoon the sauce across the tortilla, taking it right out to the rim. Add the mozzarella and half of the Parmesan in an even layer, again covering the tortilla to the edge. Sprinkle on a light pinch of salt, add the basil, and finish with a drizzle of olive oil.
- Move the skillet to the broiler and cook until the cheese has melted and you see browned spots, 2 to 4 minutes. Take the skillet out of the oven and add the rest of the Parmesan. With a small metal spatula, carefully loosen the pizza around the edges so any browned cheese lets go of the pan. Lift an edge and check the underside. If you want it crisper, set the skillet over medium heat and keep cooking, giving the pizza a little swirl and checking underneath now and then, until it is as crisp as you like. Slip the pizza onto a cutting board, cut it, and serve right away.
