Ingredients
- 2 large tomatoes, diced
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon sumac
- Salt and pepper to taste
- 4 pieces of pita bread, cut into cubes and lightly toasted in the oven
Directions
- Heat your oven to 350°F (175°C).
- Spread the pita cubes out on a baking sheet and toast them in the oven for 10 minutes, until they’re nicely browned. Move them aside and let them cool.
- In a large bowl, stir together the salt, pepper, sumac, lemon juice, olive oil, mint, parsley, red onion, cucumber, and tomatoes until everything is well mixed.
- Fold in the cooled pita pieces, then toss again so the salad is evenly combined. Check the seasoning and tweak it if needed.
- Serve right away, or refrigerate the salad and serve it within 2 hours.
