Ingredients
- 3 teaspoons vodka
- 2 tablespoons plus 1/4 cup olive oil, divided
- 1 cup water
- 1 egg
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon baking powder
- Kosher salt
- 12 ounces crumbled feta
- 4 scallions, thinly sliced
- 1 tablespoon butter
Directions
- Set a rack in the center of the oven and heat it to 500 degrees. In a large bowl, combine the vodka, 2 tablespoons olive oil, water, and egg, then whisk until the mixture looks smooth and uniform. In another bowl, stir together the flour, baking powder, and 1 teaspoon salt. Slowly whisk the liquid mixture into the flour mixture until you have a batter, taking care to smooth out any lumps.
- Pour the remaining 1/4 cup olive oil onto a rimmed baking sheet, then use your fingertips or a paper towel to coat the surface. Add the batter to the pan, scatter the feta and scallions over the top, and finish by dotting it with butter.
- Bake until the crust is crisp and golden and the feta has started to brown, about 25 minutes. Rest the tart for 5 minutes, then slice.
