Fig and Goat Cheese Bruschetta

Ingredients

  • Goat cheese
  • Walnuts

Directions

  1. Add the first 7 ingredients to a small saucepan and bring the mixture to a boil. Put the lid on, lower the heat, and simmer for 10 minutes, or until the figs have softened. Take off the lid and continue cooking for 5 minutes, until the mixture has thickened. Pull the pan from the heat and let it cool to room temperature.
  2. Heat the broiler.
  3. Spoon 1 1/2 teaspoons of the fig mixture and 1 1/2 teaspoons of goat cheese onto each slice of bread. Place the bruschetta on a baking sheet, then scatter the walnuts evenly over the top. Broil for 2 minutes, until the nuts are just beginning to brown. Serve warm.
