Ingredients
- 2 salmon filets, about 6 oz. each
- Fish rub of your choice; see note
- 2 tsp. olive oil, to grease foil
- About 4 tsp. basil pesto
- 2 or 3 medium tomatoes, sliced about 1/4 inch thick
Directions
- Heat the oven to 450 F. Set a baking sheet inside the oven as it warms, so the pan is hot when the salmon is ready.
- Tear off two sheets of foil, each large enough to enclose the salmon with extra foil to overlap. Stack the foil sheets together. Pour about 2 tsp. olive oil into the middle of the top sheet, then set the salmon over the oil.
- Sprinkle the salmon with Szeged Fish Rub, or use whatever seasoning you like. Coat each fillet with about 2 tsp. basil pesto, then lay the tomato slices over the pesto to cover the salmon.
- Close the foil tightly around the fish, folding the seam and both ends over several times to seal the packet. Move the packet onto the heated baking sheet and bake for 15 minutes.
- After 15 minutes, take the salmon out of the oven and leave it closed for 2-3 minutes. Open the packet carefully, then serve right away while the salmon and tomatoes are still hot.
