Ingredients
- 4 to 6 ounces thick boneless, skinless cod fillet
- 1 teaspoon butter
- Herbs
- 1 tablespoon dry white wine
- 1 tablespoon crème fraiche
- Zest of 1/8 lemon
- Salt and pepper
Directions
- Heat the oven to 400 degrees F. Make as many foil packets as you need this way: set 1 teaspoon butter in the middle of a large piece of heavy duty foil. Sprinkle the cod with salt and pepper on each side, then lay it over the butter. Add a generous handful of herbs, then the lemon zest, white wine, and crème fraiche. Close the foil tightly into a packet, set it on a baking sheet, and bake for 15 minutes. Serve right away with warm crusty bread or simple boiled potatoes.
- For the herbs, you can absolutely play around. Fennel fronds with chervil will be gentle and bright. Basil with tarragon leans summery. Rosemary with thyme gives the fish a woodsy, cooler-weather feel. Parsley with dill is classic with seafood. Fennel fronds, chervil, parsley, marjoram, and chives together make a fuller, greener mix, and in this case, more can be more.
