Fudge Brownie Pots

Ingredients

  • 4 Tbsp butter
  • 1/2 cup granulated sugar
  • 1/4 tsp vanilla
  • 1 large egg
  • 1/3 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1/8 tsp salt

Directions

  1. Set the oven to 350 degrees.
  2. Slice the butter into pieces and put them in a large bowl that can go in the microwave. Cook it on high in the microwave for 30 seconds, then stir until every bit has melted. Stir in the sugar, then microwave the bowl for 15 seconds. Stir again, then continue with 15 second bursts until, after stirring, the butter and sugar stay blended instead of separating, about 30-45 seconds total.
  3. Mix the vanilla extract and egg into the melted butter and sugar until combined.
  4. Use another bowl to combine the flour and cocoa powder with the baking powder and salt; stop when the mixture looks even.
  5. Tip the dry mixture into the wet mixture, and stir only until it becomes a smooth chocolate batter. Divide the batter between two 8oz. ramekins.
  6. Slide the ramekins into the 350 degree oven and bake for 25-30 minutes, stopping when the centers have puffed into domes and the tops are shiny with cracks. Cool the brownies a little before eating.
