Ingredients
- 2-2.5 lbs russet potatoes
- 2 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Generous salt and pepper
- Non-stick spray
Directions
- Set your oven to 400 degrees. Line 2 baking sheets with foil, then coat the foil with non-stick spray.
- Wash the potatoes thoroughly so any dirt or dust is gone. Slice them into very thin 1/4 inch matchsticks, then divide the potatoes between the 2 prepared baking sheets.
- Pour 1 Tbsp olive oil over the potatoes on each sheet, then toss until the fries are coated. Scatter the garlic powder, smoked paprika, salt, and freshly ground pepper over the top. It is fine if the spices are not perfectly distributed yet; they will move around when the fries are stirred during baking.
- Bake the fries in the fully heated 400 degree oven, gently stirring them with a spatula every 15 minutes. Continue baking until the fries are browned and crisp, while still a little moist in the middle. The exact timing will vary based on how thinly the potatoes were cut, so watch them closely; this batch took approximately 45 minutes.
