Ingredients
- 1/4 cup plus 1 tablespoon canola oil or other neutral oil
- 8 garlic cloves, crushed and sliced thinly
- 4 cups cooked white rice, preferably long-grain, but any variety will do
Directions
- Warm the oil in a small saucepan over medium heat, just until it starts to shimmer. Stir in the garlic and keep it moving as it cooks, until it softens, smells wonderfully garlicky, and takes on a pale gold color, 30 seconds to 1 minute. Set a fine-mesh strainer over a wok and pour the oil through it; keep the cooked garlic nearby.
- Put the wok over high heat and let the garlic oil get shimmery again. Add the rice, using a spatula to break apart any bigger pieces while you toss everything through the oil. Keep cooking, stirring and tossing often, until the rice is hot and the clumps are gone, about 4 minutes. Return the reserved garlic to the wok, toss it through the rice, and serve immediately.
