Ingredients
- 1 lb. fresh green beans
- 3 large shallots peeled, and cut into thin slivers
- 5 large cloves garlic, peeled and cut into thin slices
- 2 T olive oil
- Salt and fresh ground black pepper to taste
- 1/4 cup sliced almonds
Directions
- Heat the oven to 450F/230C. If the oven is already busy at a bit lower heat, you can still make this work; plan on roasting the beans a little longer.
- Trim the green beans. If you’re using long, slender beans, slice them crosswise into about 2 inch pieces.
- Peel the shallots and garlic, then cut them lengthwise into slivers. Don’t shave them too finely, or they’ll be done before the beans are.
- Transfer the green beans, shallots, and garlic to a mixing bowl. Add the olive oil, salt, and pepper, then toss with a wooden spoon until everything has a light, even coating.
- Coat a roasting pan with nonstick spray or a mist of olive oil, then spread the vegetables out in one layer.
- Roast for 12-15 minutes if the beans are thin, or a little longer for regular green beans, until the beans look lightly wrinkled and the shallots and garlic have turned pale golden.
- Once the beans are ready, add more salt and fresh-ground black pepper to taste, and serve right away.
