Gluten-Free Chocolate Brownies

Ingredients

  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4 cup gluten free all purpose flour
  • 1/2 cup semi sweet chocolate chips

Directions

  1. Fit foil into an 8-inch (23 cm) square pan, pressing it across the bottom and up along the sides to the top edge. Coat the foil lightly with butter or non-stick cooking spray, then heat the oven to 350º (180ºC).
  2. Set a medium saucepan over the lowest heat and warm the butter with the chocolate and salt, if you’re adding it. Stir the whole time, just until the mixture is melted and smooth.
  3. Take the pan off the heat. Mix in the sugar, then add the eggs 1 at a time, stirring after each addition.
  4. In a small bowl, sift the cocoa powder with the corn starch. Add that to the chocolate mixture, then beat the batter hard for at least 1 minute, until it looks almost smooth instead of sandy. It should start to loosen from the pan sides slightly.
  5. If you’re using nuts, stir them in now, then transfer the batter to the prepared pan and smooth it into place.
  6. Bake for thirty minutes, until the middle feels barely set. Don’t push the baking time too far. Take the pan from the oven and cool the brownies fully before lifting them out and cutting them.
