- 1.25 ounces sweet rice flour
- 1 tablespoon baking powder
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon xanthan gum

- 1 1/4 cups milk
- 2 large eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- Non-stick cooking spray
Directions
- Add the white rice flour to a medium mixing bowl, then whisk in the cornstarch, sweet rice flour, baking powder, granulated sugar, salt, and xanthan gum until the dry mixture is evenly combined.
- In a small bowl, beat the milk with the eggs, oil, and vanilla extract until the mixture looks smooth.
- Pour the milk mixture into the bowl with the flour mixture. Use a balloon whisk or a handheld mixer to work the batter until it is completely smooth, with no lumps left behind.
- Warm your waffle iron as directed by the manufacturer. Coat it well with non-stick cooking spray, then add batter to the hot iron, using the amount that fits your particular machine. Cook until the waffle is crisp and golden brown.
