Ingredients
- Softened unsalted butter and all-purpose flour, for preparing the baking pan
- 1 stick + 2 tablespoons unsalted butter
- 1/2 cup light brown sugar
- 1/2 cup dark brown sugar
- 1/4 cup honey
- 1 large egg, at room temperature
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup + 2 tablespoons all-purpose flour
- 1/2 cup chocolate chips
- 1/3 cup chopped raw pecans
Directions
- Heat the oven to 350ºF. Rub softened butter over an 8 x 8-inch baking pan, then coat it with flour.
- Melt the butter in a small saucepan set over low heat, or use a small microwave-safe bowl in the microwave. Once melted, put it aside so it can cool.
- In a large bowl, whisk the melted butter with the sugars, honey, egg, salt and vanilla extract until the mixture looks smooth. Stir in the flour and chocolate chips with a wooden spoon or rubber spatula.
- Scrape the batter into the prepared pan and spread it evenly, smoothing the surface and pushing it into the corners. Scatter the pecans over the top.
- Bake for 25 minutes, until the middle has just set and the edges are only lightly golden. The blondies will firm up as they cool.
- Cool the blondies completely, then cut them into 16 squares, each 2 x 2-inch.
