Ingredients
- 1/3 cup mayonnaise
- 2 Tbsp Dijon mustard
- 2 Tbsp honey
- 1/8 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- Freshly cracked pepper
- 1 Tbsp vegetable oil
- 2 lbs. pork chops, one-inch thick
Directions
- Stir the mayonnaise, Dijon, honey, garlic powder, paprika, salt, and freshly cracked pepper together to make the honey mustard sauce; about 15 cranks of the pepper mill is right. Heat the oven to 350 degrees.
- Blot the pork chops with a paper towel so the surface is dry, then sprinkle both sides with a pinch of salt and freshly cracked pepper.
- Pour 1 tablespoon of vegetable oil into a heavy skillet and warm it over medium-high heat. Once the pan is hot, work with 2 pork chops per batch and brown them on both sides, 3-5 minutes per side.
- Coat a casserole dish with non-stick spray, then transfer the browned pork chops into it. Spread the honey mustard sauce across the tops of the chops.
- Bake the chops in the hot oven for 30 minutes. Take them out, then switch the oven to broil.
- Adjust the oven rack so the tops of the chops sit about 6 inches below the broiler. Broil for 3-5 minutes, just until the sauce is browned and bubbling. Serve hot.
