Ingredients
- 2 avocados, peeled and sliced
- 2 grapefruits, peeled, segmented, seeds removed
- Lettuce
- 1/2 shallot minced
- 1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano
- 1 1/2 teaspoons lime zest
- 3 Tbsp lime juice
- 1/2 cup olive oil
- 1 teaspoon sugar
- 1/4 teaspoon kosher salt
Directions
- In a small bowl, stir together the vinaigrette ingredients. To prepare the grapefruit segments, cut a half-inch or more from both the stem end and blossom end, taking off enough to reveal the flesh. With a sharp knife, slice away the peel by following the curve of the fruit, continuing until no peel remains.
- Slide the knife along the membranes between the grapefruit sections. Free each segment by cutting it loose from the membrane, or by easing it out after you have cut along one side. Work your way around the grapefruit until every segment has been removed without the connecting membranes. Slice the avocados.
- To put the salad together, set a few lettuce leaves on a plate, then arrange the avocado slices and grapefruit segments on top. Spoon the dressing over everything.
