Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 flatbreads or pita breads
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped tomatoes
- 1/4 cup sliced red onion
- 2 tablespoons chopped fresh parsley
Directions
- Bring the oven up to 375 degrees F, which is 190 degrees C.
- In a small bowl, combine the olive oil, oregano, garlic powder, feta cheese, tomatoes, red onion and parsley. Tuck that aside while you handle the chicken.
- Set the chicken breasts on a baking sheet and sprinkle them with salt and pepper to taste. Bake in the hot oven for 25 minutes, or until the chicken is cooked through. Take it out and let it cool, then pull it into small pieces with 2 forks.
- Warm the flatbreads or pita breads in the oven for 5 minutes, just until they are lightly toasted. Take them out, divide the shredded chicken evenly between them, and spoon on the reserved parsley mixture, using half for each. Put them back in the oven and bake for another 10 minutes, until heated through and the cheese has melted. Serve warm.
