Green Beans with Mint and Red Onion

Ingredients

  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 red onion, thinly sliced
  • 1/2 teaspoon dried chile flakes
  • 1/2 tablespoon mint leaves, chopped
  • 1/2 green beans, hopefully fresh
  • Salt and pepper

Directions

  1. Warm the olive oil in a pan over medium high heat, stopping just before it begins to smoke. Add the onion, garlic, chile flakes, and mint, and cook everything together for about a minute.
  2. Add the green beans to the pan and continue cooking, giving them a stir now and then, for 15 minutes. Season to taste before serving.
