Grilled Asparagus with Parmesan
Grilled asparagus gets smoky and tender, then a salty Parmesan finish makes it a simple side that feels a little special.

Ingredients
- 1 pound asparagus
- 1 T extra-virgin olive oil
- salt/pepper to taste
- about 1/2 cup freshly grated parmesan cheese
Directions
- Bring your grill, charcoal or gas, up to medium high heat; it should feel hot enough that your hand can hover over it for only a few seconds.
- Set a vegetable grill pan on the grate so it warms while you get the asparagus ready. If your pan tends to stick, give it oil or non-stick spray first. If you’d rather grill without the pan, choose larger spears and lay them crosswise to the grates.
- Snap a single asparagus spear to find where the tough end begins, then cut the rest of the bunch to match that length.
- Put the trimmed asparagus in a plastic bag, or use a pan if that’s easier. Drizzle with olive oil, add a little salt and pepper, and toss everything around until the spears are well coated.
- Arrange the asparagus on the grill pan and cook, turning the pieces every 2 minutes, until they’re browned and done the way you like them. The total time depends on your grill, but for charred asparagus, figure about 10 minutes.
- Serve the asparagus hot, with freshly grated parmesan scattered over the top.
