Grilled Banana Boats with Peanut Butter, Chocolate, and Marshmallows

Ingredients

  • 4 ripe yellow bananas
  • 1 cup mini-marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter chips
  • Type of fire: two-zone indirect
  • Grill heat: medium-high

Directions

  1. Leaving each banana in its peel, cut a slit lengthwise down the banana, making sure you do not cut all the way through. Gently open the pocket and fill it with 1/4 of the chocolate chips and peanut butter chips, then add 1/4 of the marshmallows over the top. Do the same with the remaining 3 bananas.
  2. Light one chimney 2/3 full of charcoal. Once the charcoal is fully lit and coated in gray ash, dump it out and bank the coals on one side of the charcoal grate. Put the cooking grate on, close the grill, and heat it for 5 minutes. Scrub and oil the grate. Arrange the bananas on the cooler side of the grill, cover, and cook until the fruit is very soft and the peels are black, about 10 to 15 minutes. Take them off the grill, cool for 5 minutes, and dig in with a spoon.
