Ingredients
- 2 Tbsp butter
- 1/4 cup honey
- 1/4 cup dijon mustard
- 1 Tbsp olive oil, plus more for grill
- 2 tsp fresh lemon juice
- Salt and freshly ground black pepper
- 4 boneless skinless chicken breasts
- Fresh parsley, for garnish, optional
Directions
- Put the butter in a small microwave-safe bowl and warm it in the microwave until it has melted. Mix in the honey, dijon mustard, olive oil and lemon juice, then add salt and pepper to taste. Transfer half of this honey mustard mixture into another bowl.
- Heat the grill to 425 degrees. Flatten the thicker areas of the chicken breasts until the pieces are evenly thick, then season each side with salt and pepper. Lightly oil the grill grates.
- Set the chicken on the grill and cook for 4 minutes. Brush the top with the honey mustard glaze, keeping the 2nd bowl of glaze untouched for finishing.
- Turn the chicken over, coat the other side with honey mustard glaze, and keep grilling until the chicken is done, about 4 – 5 minutes more. The middle should read 165 on an instant-read thermometer.
- Coat both sides of the chicken with the reserved glaze from the second bowl, then move it to a plate and let it rest for several minutes before serving. Add fresh parsley, if desired.
