Ingredients
- 2 slices Double Fiber Bread or Whole Wheat Bread
- 1.5 oz Medium Cheddar Cheese, grated, about 1/3 cup packed
- 1/2 oz Parmesan Cheese, finely grated, about 2 Tbsp
- 1/4 cup finely chopped quality ham
- 6 small broccoli florets, steamed then diced into small pieces
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 Tbsp Extra Virgin Olive Oil, divided
Directions
- Add the Cheddar and Parmesan to a bowl. Stir in the ham and broccoli, then season the mixture with onion powder and garlic powder, plus salt and black pepper.
- Pile the filling onto 1 slice of bread, set the other slice on top, and press lightly so the sandwich holds together.
- Set a nonstick skillet over medium low heat. Pour in 1/2 Tbsp olive oil, tipping the pan to coat the surface, then put the sandwich in right away. The oil should not heat by itself first, or the bread can brown before the middle cooks through. Cover the pan and cook until the underside is golden, 2 – 3 minutes.
- Use a spatula to carefully take the sandwich out of the pan. Add the remaining 1/2 Tbsp olive oil, tilting the pan again so it spreads evenly.
- Turn the sandwich over carefully and place it back in the pan. Cover again and cook until the second side is golden underneath and the cheese has melted, about 2 – 3 minutes. Serve warm.
