Ingredients
- 2 pounds skinless, boneless chicken breasts
- 2 tablespoons extra virgin olive oil for the marinade, plus more for grilling
- Grated zest from 2 limes
- Juice from 2 limes
- 3 tablespoons chopped cilantro
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lime wedges, fresh sprigs of cilantro, and slices of avocado, to serve
Directions
- Set the chicken breasts between 2 sheets of plastic wrap or wax paper, then use a meat mallet or rolling pin to flatten them to the same thickness all over.
- In a large bowl, stir together the olive oil, lime zest, lime juice, cilantro, sugar, salt, and pepper. Put the chicken into the bowl and work the marinade into it with your hands. Cover the bowl and refrigerate for at least 30 minutes, or as long as 4 hours or overnight.
- Heat a gas or charcoal grill to medium-high, or until you can keep your hand about 1 inch above the grates for 1 second.
- Take the chicken breasts out of the refrigerator. Lift them from the marinade and blot them well with paper towels, then rub the chicken with some olive oil.
- Dip a paper towel in a little more oil, grab it with tongs, and swipe it over the grill grates.
- Once the grill is hot, lay the chicken breasts on the grates. Cook for a few minutes per side, just until the chicken is cooked through.
