Ingredients
- For the spice mixture:
- 2 teaspoons kosher salt
- 2 teaspoons ground turmeric
- 1 teaspoon crushed red pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon powdered ginger
- 1/2 teaspoon garlic powder
- 1/2 teaspoon freshly ground black pepper
- For the cauliflower:
- 1 head of cauliflower, trimmed of green leaves and cut into 3/4-inch slices
- 2 tablespoons extra-virgin olive oil
- 1 tablespoons finely chopped fresh cilantro leaves and tender stems
- Type of fire: two-zone indirect
- Grill heat: medium-high
Directions
- Stir the spice mixture ingredients together in a small bowl until they are evenly combined.
- Coat the cauliflower on every side with oil, then season it generously with the spice mixture.
- Start a full 1 chimney of charcoal. Once the charcoal is lit and coated in gray ash, dump it out and bank the coals on 1 side of the charcoal grate. Put the cooking grate on, cover the grill, and let it heat for 5 minutes. Scrub the grilling grate clean, then oil it.
- Set the cauliflower over the hot side of the grill. Cook it, turning as needed, until both sides have some good charred patches, about 3 minutes per side.
- Slide the cauliflower over to the cooler side of the grill, put the cover back on, and keep cooking until it is tender all the way through, 10-15 minutes longer.
- Move the cauliflower to a plate, scatter the cilantro over the top, and serve.
