Ingredients
- 4 large tomatoes, cut into 1/2-inch slices
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- 1/2 cup burrata cheese, torn into pieces
- 2 tablespoons chopped fresh parsley leaves
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Pinch of red pepper flakes
Directions
- Coat the tomatoes and bread on every side with 2 Tbs. of the oil, then sprinkle with salt and pepper. Set the tomatoes on the grill cut side down, turn them once, and cook until lightly charred, 6 to 8 minutes. Grill the bread as well, turning once, until it is browned and crisp at the edges, 3 to 4 minutes.
- Crumble the bread into a medium bowl. Add the parsley, lemon juice, and the remaining 1 Tbs. oil, then toss everything together. Arrange pieces of burrata over each tomato half. Spoon the parsley mixture onto the tomatoes, finish with the capers, and serve immediately.
