Ham and Swiss Quiche

Ingredients

  • 1 recipe pie crust
  • 1 tablespoon butter
  • 1/2 pound ham steak, cut into 1/2 inch cubes
  • 4 eggs, beaten
  • 1 cup milk
  • 1 teaspoon whole grain mustard
  • 1 teaspoon Worcestershire sauce
  • Kosher salt and freshly ground black pepper
  • 1 cup grated swiss cheese

Directions

  1. Set a rack in the center of the oven and heat it to 350 degrees F. Roll out the pie dough, nestle it gently into a pie dish, trim the overhang, and slide it into the refrigerator until the filling is ready.
  2. Warm the butter in a medium skillet on medium high heat. Add the ham and cook it, turning and stirring often, until the pieces are browned all over, about 4 minutes. Take the skillet off the heat and let the ham cool.
  3. In a large bowl, whisk the egg, milk, mustard, and Worcestershire sauce until smooth. Add salt and pepper to taste.
  4. When the ham is no longer hot, spread it across the bottom of the chilled crust, then sprinkle the grated swiss cheese over the top. Pour in the egg mixture and move the quiche to the oven. Bake until the top is lightly golden, the quiche has puffed, and the center gives a small wobble when you gently shake the pan, 30 to 40 minutes. Let it rest for at least 20 minutes before you slice and serve. You can serve the quiche at room temperature, or chilled straight from the refrigerator.
