Hamekins

Ingredients

  • 6 ounces ham, thinly sliced
  • 4 ounces cheese
  • 4 tablespoons sour cream or crème fraiche
  • 4 eggs
  • Salt and pepper
  • Bread for dipping and scooping

Directions

Heat the oven to 375 degrees. Cut or tear the ham and cheese into small bits, then mix them together and portion the mixture evenly into the ramekins. Add 1 tablespoon of sour cream or crème fraiche over the ham and cheese in each ramekin, and crack an egg over the top. Sprinkle with salt and black pepper. Set the ramekins inside a high-sided baking dish that can fit them all, then add hot water to the larger dish until it comes halfway up the ramekins. Bake until the eggs have just set, about 18-20 minutes.
