Prep 15 min · Makes 4 servings

Ingredients
- 1 can hearts of palm, drained and cut into slices
- 2 small avocados, diced
- 2 T + 1 T fresh squeezed lime juice
- 1 cup small grape tomatoes, cut in half
- 1/4 cup thinly sliced green onion
- 1/2 cup chopped cilantro, optional
- Sea salt to taste
Directions
- Set the palm hearts in a colander in the sink so they can drain while you get the rest of the salad ready.
- Cut the avocados into dice, add them to a bowl big enough for the finished salad, and coat them with 2 T fresh lime juice.
- Slice the hearts of palm, pulling the pieces apart into rings, or halve them if they are being stubborn.
- Halve the grape tomatoes.
- Thinly slice the green onions, and chop the cilantro if you’re including it.
- Add the hearts of palm, tomatoes, and green onions to the avocado and lime mixture, and toss gently. Taste and add more lime juice as needed. Another tablespoon is a good place to land.
- Sprinkle the salad generously with sea salt, then carefully fold in the chopped cilantro, if using.
- Serve it right away, or refrigerate it if needed.
