Ingredients
- 24 ounces new potatoes
- 1 teaspoon salt
- 1/8 cup white balsamic vinegar
- 1/2 cup chopped scallions
- 1/2 cup chopped parsley
- 1/4 cup chopped chives
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Directions
- Place the new potatoes in a large pot, then add cold water to cover and stir in 1 teaspoon salt. Bring the pot to a boil, and cook the potatoes until a fork slides in easily, 8-10 minutes. Drain them well.
- Transfer the warm new potatoes to a large bowl and toss them with the white balsamic vinegar. Set them aside for 5 minutes so they can absorb the flavor.
- Add the scallions, parsley, chives, and olive oil, then toss until everything is nicely coated. Finish with salt and pepper to taste.
