Ingredients
- 1 tablespoon vegetable oil
- 1 small yellow onion, diced
- 3 medium cloves garlic, minced
- 2/3 cup hoisin sauce
- 1/2 cup ketchup
- 1/3 cup dry sherry
- 1/3 cup rice vinegar
- 1/4 cup honey
- 2 tablespoon soy sauce
- 1 tablespoon Sriracha
- 1/2 teaspoon ground Szechuan peppercorns
- 1/2 teaspoon ground white pepper
- 1/4 teaspoon Chinese five-spice powder
Directions
- Warm the oil in a medium saucepan set over medium heat, just until it starts to glisten. Stir in the onion and cook it until tender, about 5 minutes. Add the garlic and cook briefly, just until you can smell it, about 30 seconds.
- Stir in the hoisin sauce along with the ketchup, sherry, rice vinegar, honey, soy sauce, Sriracha, Szechuan peppercorns, white pepper, and Chinese five-spice powder. Once everything is mixed together, bring the sauce up to a boil, then turn the heat to low. Simmer, stirring now and then, until it has thickened a bit, about 15 to 20 minutes.
- Puree the sauce until smooth with an immersion blender, or pour it into the jar of a countertop blender and blend it there. Cool it to room temperature, then spoon it into a jar and refrigerate for up to a month.
