Ingredients
- 14 oz. extra firm tofu
- 1/4 tsp salt
- 2 Tbsp cornstarch
- 2 Tbsp cooking oil
- 1/2 cup hoisin sauce
- 2 green onions
- 1 carrot
- 1/4 cup peanuts
- 1 cup cooked rice
- 1 head lettuce
Directions
- Take the tofu out of its package and set it between 2 plates or rimmed baking sheets. Put a heavy pan, such as a cast iron skillet, on top to press out the extra moisture, and leave it for about 30 minutes. Drain away the liquid, then blot the tofu with a paper towel.
- Cut the tofu into small, uneven pieces and transfer them to a bowl. Sprinkle with salt and 1 Tbsp cornstarch, then gently turn the tofu until it is coated. Add the remaining 1 Tbsp cornstarch and fold again.
- Warm the cooking oil in a large non-stick skillet, either cast iron or teflon, over medium heat. When the oil is hot, add the coated tofu. Cook until the underside is golden brown, stir, then let it brown again on the bottom. Continue that way until most of the tofu has crisp, golden edges, about 10 minutes total, then take the skillet off the heat.
- Pour the hoisin sauce over the fried tofu and stir until the pieces are coated. Slice the green onion, shred the carrot, and roughly chop the peanuts.
- Assemble the lettuce cups by adding 1-2 Tbsp cooked rice to each lettuce leaf. Spoon on 1-2 Tbsp of the hoisin tofu, then finish with sliced green onion, shredded carrot, and chopped peanuts.
