Ingredients
- 14 oz. extra firm tofu, drained well
- 5 T soy sauce, gluten-free if needed
- 1 T rice vinegar
- 1 tsp. sesame oil
- Pinch red pepper flakes
- 1 lb. fresh Crimini mushrooms, cut in quarters
- 1 T agave nectar
- 1 T Hoisin sauce, gluten-free if needed
- 1 T + 1 T peanut oil
- 3-4 slices fresh ginger root and 2-3 sliced garlic cloves
- 1/2 cup diagonal sliced green onions
Directions
- Take the tofu out of its package and set it in a colander so it can drain thoroughly. Once drained, slice it into cubes roughly 1 inch across.
- Stir together the soy sauce, rice vinegar, sesame oil, and red pepper flakes, then combine that marinade with the tofu in a ziploc bag or plastic container for 30 minutes. If you prefer a chewier texture, you can skip the marinating. While the tofu sits, quarter the mushrooms, or cut them into pieces about the same size as the tofu.
- After 30 minutes, place the tofu in a colander set over a bowl and drain it well, saving the marinade below. Stir the agave nectar and hoisin sauce into the saved marinade to turn it into the sauce.
- Set a wok over high heat. Pour in 1 tablespoon of oil and warm it until the surface begins to shimmer.
- Add the sliced garlic and ginger, cooking only until they smell fragrant, then remove and discard them.
- Reduce the heat to medium-high and add the tofu right away. Cook it, turning frequently, until nicely browned, about 5-7 minutes. Stay close here; if the tofu is browning faster than you can turn it, lift the pan away from the heat for a moment.
- Transfer the tofu out of the wok. Turn the heat back to high, add the remaining oil, then add the mushrooms. Cook until the mushrooms are tender and their released moisture has cooked off, about 4-5 minutes.
- Return the tofu to the wok with the mushrooms.
- Pour in the sauce, reduce the heat to medium high, and cook while stirring until everything is lightly coated and the sauce has reduced and thickened somewhat, about 2-3 minutes.
- Stir in the sliced green onions and cook for 1 minute longer.
